Beat the Heat with Kool Kokum Sherbet

As the whole country is sweating under the beating sun. I bring some refreshment to cool you all off a bit. Presenting to you the Kokum Sherbet. Yes, a cool refreshing drink originated from the Konkan coast and popular in the region of Maharashtra.

Made from Kokum or Mangosteen, It is one of the best and natural coolant available with us during the times of this scorching heat.

So let’s get on with it.

 Ingredients

1 cup fresh or semi dried Kokum

3/4th cup of grain sugar

1 tsp cumin powder

1/2 tsp black or sea salt

To Serve

Juice of half a lemon

Mint sprig

Ice cubes

Method

  1. Bring together the Kokum and sugar in a heavy bottom pan and add just enough water to cover the melange.

  2. Place the pan on heat and allow it to boil.

  3. After a boil reduce the heat to simmer and let it simmer till the mixture resembles a consistency of a light sugar syrup.

  4. Let the mixture cool down to room temperature.

  5. Meanwhile roast the cumin seeds and crush.

  6. Once the Kokum mix has cooled down strain it through the muslin cloth.

  7. Add the salt and cumin powder to it and store in an airtight container in your fridge.

To Serve

  1. Take a glass and fill half with ice cubes.

  2. Add 2 tbsps of Kokum mixture to it and fill the glass with cold water.

  3. Mix it thoroughly and add lemon juice to it.

  4. Garnish with mint sprig and sip it to beat the sun down.
