How to prepare Maharashtra’s famous missal pav in 4 easy steps:

Missal Pav is a favourite Maharashtrian street food snack – which is mainly a mixture of moong and matki sprouts or a mix pulses sprouts (is selected as per the taste of an individual) cooked in spicy masala curry and served with pav (bun)/ladi pav/bread. It is a very famous and popular Marathi breakfast.

 Prep Time : 20-25 minutes

 Serves : 4

 

Ingredients for Missal Pav:

missal pav Moong sprouts : 1 cup

Matki sprouts : 1 cup

Oil : 2 tablespoons

Asafoetida : a pinch

Mustard seeds : 1/2 teaspoon

Onions : 2 large finely chopped

Green chillies : 2 slit

Garlic paste : 1 teaspoon

Ginger paste : 1 teaspoon

Turmeric powder : 1/2 teaspoon

Red chilli powder : 1½  teaspoon

Coriander-cumin powder : 1 teaspoon

Salt to taste

Garam masala powder : 1 teaspoon

Fresh coriander leaves finely chopped : 2 tablespoons

Farsan : 1/2 cup (a mixture of namkeen snacks as gathi, shev, fried groundnuts, fried cornflakes)

Lemon juice as required

Lemon slices as required

Method for preparing missal pav:

 1.Mix both moong and matki sprouts in a colander/bowl and wash thoroughly. Preferably under running water for a minute.  Drain and keep aside.

 2. Heat oil in a pan, add   asafoetida, mustard seeds, and half of the chopped onions. Saute for a minute and add slit green chillies. Add garlic paste and ginger paste. Stir well and sprinkle a little water.

 3. Now add turmeric powder, red chilli powder and dhania-jeera powder. Mix well and then add the sprouts.  Mix again. Add salt to taste and three cups of water. Bring to a boil.

 4. Add garam masala powder and 3/4th chopped coriander leaves keeping remaining for garnish. Cover and cook for ten to twelve minutes or until you find the sprouts tender and cooked.

To serve Misal Pav: Pour a ladleful of cooked sprouts in a deep bowl along with the watery gravy. Sprinkle generously with farsan. Sprinkle remaining chopped onion, chopped coriander leaves and freshly squeezed lemon juice. Serve with lemon slices and pav/bun.

Chef’s Tip from Master Kitchen: For this recipe you need to keep the gravy a bit watery.  It can be served as a breakfast, snack or brunch.

 Farsan is different type of snacks made of mainly gram flour. It is very popular in India.
