PAPDI CHAAT- “The Easiest way to make Chaat”

Papdi Chaat  is one of the most common and familiar names in the world of chaat. Available at almost every street of North India, papdi chaat is the most fuss free and easy to make dish one can ask for.

So let’s get on with making this at home.

Ingredients for papdi chaat

For Papdi

1 cup of Maida

1 tsp of Ajwain

2 tbsp of melted Ghee

Pinch of salt

Oil to deep fry

For the Chaat

1 Boiled mashed potato

1 Onion chopped

1 Tomato chopped

Khajur aur Imli ki chutney

Pudina chutney

Beaten curd

Red chilly powder

Chopped coriander

Method For preparing Papdi

  1. Start by mixing all the ingredients required for the dough in a vessel.

  2. Rub the maida between the palm of your hands, till it resembles bread crumbs.

  3. Knead the mixture into a firm, smooth dough using a little water.

  4. Once done allow the dough to rest by covering it with a wet muslin cloth.

  5. After resting, divide the dough into small balls equal to the size of a small lemon.

  6. Now roll the balls into thin circles using a rolling pin.

  7. Prick the circles using a fork before start frying.

  8. To fry the papdis, heat the oil first and then reduce the heat to low and then add the papdis to it.

  9. Fry the papdis in batches and on low heat to make them crisp.

For Khajur aur imli ki chutney

  1. Take a pan and cover 2 cups khajur and 1/2 cup of tamarind with just enough water and boil and then reduce it to simmer.

  2. Add jaggery, salt, ginger powder and red chilly powder to it while simmering.

  3. Once the mixture has assimilated all the flavours, puree it.

  4. Pass the mixture through a fine sieve.

For the Pudina chutney

  1. Mix 1 cup of mint leaves, 1/2 cup of chopped coriander, 2 green chillies, 2-3 cloves of garlic, juice of a lemon and seasoning in a blender.

  2. Puree the mixture into a very fine paste using a little water if required.

For the Chaat

  1. Take 8-10 nos papdis in a serving plate and put mashed potatoes on top of the papdis.

  2. Top it up with chopped onion and tomato and pour a generous dollop of the curd on top..

  3. Now pour the khajur-imli ki chutney and pudina chutney and garnish with a sprinkle of red chilly powder, chopped coriander and sev. Done, have a taste of it.

Easy to make yummy to taste.
