Gulab Sherbet
When somebody thinks of Love, the one thing that comes into the mind is Rose, yes! the eternal symbol of Love. But today we will present this symbol of love in a way to beat the scorching heat.
So, let’s try this with Love.
Ingredients for Gulab Sherbet
Rose petals, 20-25 nos
Green Cardamom, 7-8 nos
Pomegranate juice, 1 cup
Sugar, 1 cup
Lemon juice, 1tsp
Rosewater, 1tbsp
Mint sprig, for garnishing
Method for preparing Gulab Sherbet
Take a glass jar with a tight-fitting lid or a water bottle with a tight lid and tear and add all the rose petals in the jar along with the broken cardamom pods and cover it with hot water. Tightly seal the jar with the lid and leave it in a cool dry place overnight.
Blend the ingredients of the jar in a blender in the morning.
In a heavy bottomed pan take sugar cover it with just enough water and bring it to a boil and then simmer till the sugar dissolves.
Add the blended rose paste along with the rose water, lemon juice and pomegranate juice to the simmering sugar syrup.
Simmer the syrup for a few more moments making sure that it doesn’t forms threads.
Remove the syrup from heat and let it cool.
Your concentrated sugar syrup is ready.
To use the syrup take a juice tumbler with a few ice cubes and put 2-3 tbsps of the syrup in the glass and add cold water to it, stir and garnish with mint sprig and rose petals on top.
Enjoy and beat the heat of the scorching sun with the Love of Rose Sherbet.

1. Pomegranate juice here is being used for colour, you can replace it with beet root as well.
