Appi Payasa or Happala Payasa is a very yummy dish which is the hot favorite of all who have tasted it. Though preparing Appi Payasa is a little tedious, I have simplified the steps as much as possible to enable all to savor this excellent porridge.
Ingredients
- Chiroti Soji – 1 Cup
- Maida – 1 Teaspoon
- Rice flour – ½ Teaspoon
- Sugar – 1 Cup
- Milk – 1 Litre
- Cashew, Raisins, Almonds
- Cardamom, Cinnamon
Preparation
Knead one teaspoon pure ghee with half spoon rice flour till it is well mixed. To this mixture add Chiroti Soji and Maida flour. Add water in small quantities and make a dough to the consistency of Chapati dough. Put this in an airtight container and allow it to settle for about an hour.
Now make small balls from this dough and make thin layers. Heat pure ghee in a pan and deep fry this till it turns golden brown. You can deep fry the layers either in whole or by cutting it into pieces and fry. Put the fried pieces into a bowl and crush them into small pieces with the help of a masher.
Heat 1 liter of milk and when it starts boiling, add these mashed pieces into milk, keep stirring till it is cooked to a smooth consistency. Now add sugar to taste, cook for a few more minutes till sugar dissolves and starts boiling. Set it aside for a few minutes, now add fried dry fruits, Cardamom, and Cinnamon Powder.
